Centre for Tourism and Hospitality (CTH) alumna Leila Akinyi Katambo has seen successful days as she put her passion of cooking into a business, Leila’s Amazing Kitchen (LAK) operating in Mombasa, is currently celebrating one year of existence under sole proprietorship. LAK offers a wide range of catering options for church groups, office customers, parties, and individual catering. Some of the majorly sold foodstuff include her special doughnuts, cherry cakes, spicy samosas, her warm chapatis and yummy meat skewers.

 

The catering kitchen, started on 25th April, 2015, is also described as amazing due to its ability to produce a variety of desirable dishes at a time despite its small size. Start-up capital and operational costs for the business are derived from personal equity and funds from family. Marketing is currently done effectively via word-of-mouth. The enterprise sets itself aside from the ordinary catering deliveries by creating of-the-book recipes and delicacies that keep the customers enticed and not expecting the ordinary.

 

LAK aims at improving and expanding its service points and operations, borrowing for the lessons Leila learnt at university, to suit the larger awaiting market growing to a globally recognized company. This is by looking to permanently employ trained and specialized individuals, set aside larger space for operations, purchase larger and more efficient operating equipment and expansive networking. The business is currently employing part-time labourers thus suffers inconsistencies. Nevertheless, it is the mission of the enterprise to set high standards in catering services by ensuring that individuals studying the Hospitality related courses find the high standards out in the work environment and maintain them as taught in the institutions and nothing less.
